ANSWER: What is a “large” quantity of fruits and vegetables? It might look large compared to what most people are used to eating, but it's actually a “normal” quantity. I personally don't see how eating lots of fruits and vegetables can be bad for you if the diet is otherwise balanced and provides every nutrient you need.
There are sometimes problems associated with eating too much of one particular food, such as acidic fruits for example. I have reviewed all of them in the new edition of my book, “The Raw Secrets” (
"Can you handle the raw truth?"). But in general it's very difficult to overeat on fresh raw fruits and vegetables.
Personally, I'm going to stick with the idea of fruits and vegetables in “adequate” quantities being the healthiest foods.
