Dear readers,

If your a northern dweller like me, you must be cheering up at the moment! I’m like another person when summer starts! Isn’t there a better time also to eat well and exercise?

Last week, about 1300 people joined me for a 5-day spring cleanse, which was a big success! For 5 days, we ate raw foods, without any fat, and did some exercise. I gave people daily updates and ideas about what to eat. Over 98% of participants of the cleanse who responded to the survey I conducted afterwards told me they’d be willing to do this again. I certainly plan to organize another cleanse for those who missed this one, and for those who want to give it another try.

WASHING PRODUCE

QUESTION: What do you clean your produce with? Do you do anything special? What is the best, in your opinion, way to clean fruit/veggies?

ANSWER: Good question. I peel what I can and use a special non-toxic soap to clean certain non-organic fruits. This soap can be found in most health food stores. I use it to wash grapes, figs, bell peppers, etc., when they are not organic.

A BOOK YOU SHOULD KNOW ABOUT

Christopher Westra has written a very good book on how to transition to a raw-food diet. His book is very informative and enjoyable to read, and deals a lot with the mental aspect of changing to a raw (or mostly raw) diet. His book is filled with useful information I haven’t seen in other books.

HOW TO DEAL WITH HOSTILE FRIENDS
AND FAMILY MEMBERS

QUESTION: “Do you find yourself having to defend your rejection of drinking putrid tape water, or not wanting to eat a family dinner of dead pig and salt juice without getting abuse and offence?

I'd love you to post some great comebacks for peoples misinformed comments/insults- especially in regards to the good old staple- milk/cheese, and the delightful chemical laden meat products.”

ANSWER: I don't mind too much people's opinions — with time and a little psychology, difference is better accepted. I don't think there are any good lines to throw at people when they challenge your beliefs. It will only make the situation works. I find the best approach is to instead agree with them, change the subject, or refer to the opinion of your doctor. I find it pointless to start a discussion, in most cases. Instead, be polite, smile, use psychology, and do not challenge.

Some lines I use the most:

BUT WHERE DO YOU GET YOUR PROTEIN?!

*Wrong answers* (unless you insist on ruining the party and making a fool of yourself):

1) Where does the gorilla get its protein? Where does the cow get its protein? You know, this whole theory is wrong, you’ve been brainwashed, man!
2) I get my protein from fruit!

*Better answers* (Do not challenge, just make friends. People who are interested will come to you).

1) Actually, I don't really know... my doctor (or nutritionist) takes care of that.
2) Well, I find nutrition to be a very boring subject... by the way, did you see the new Tom Hanks movie?
3) I don't know. I never really thought about that. But you know, I feel good, and that’s the most important thing, don’t you think?

YOU KNOW, IF YOU DON'T DRINK MILK YOU'LL GET OSTEOPOROSIS!

*Wrong answers* (unless you’re absolutely committed to making enemies):

1) You know, we don’t need to drink milk to get strong bones! It’s all false propaganda by the milk industry!
2) Did you know that the 3 countries that have the highest rates of osteoporosis are also the biggest consumers of dairy products? What do you say to that!

*Better answers* (agree with something instead, you know they’re not ready to hear the truth anyway!):

1) Oh, well I better check that out. Thanks for the advice.

Remember, people think the opinion of a doctor is the word of God. Unless it’s a vegan doctor, of course.

The 3 Essential Rules of Food Combining

You may have heard about the concept of food combining. Dr. Shelton, who did most of the research on the subject, popularized it in his book “Food Combining Made Easy.” Later the Diamonds, with their book “Fit For Life,” made the food combining theory available to the masses.

Since then, thousands of food combining charts have been created, and yet many people are confused about those simple rules. They try to follow them without really understanding them.

I get a lot of questions about food combining. “How can you combine fruits and vegetables together? I thought they should never be mixed!” is one question.

Or some people tell me: “I thought melons should always be eaten alone!”

Before answering those questions, let’s go back to the beginning.

Almost 100 years ago, Dr. Hay, an American physician, started the research on food combining. At the time, no one even suspected that certain foods could cause digestive problems when mixed together. After a series of experiment, he came to the conclusion that protein foods (meat, nuts, cheese, etc.) should be eaten separately from starchy foods (bread, potatoes, etc.), for optimal digestion.

Later came Dr. Shelton, with his methodical and analytic mind. Dr. Shelton first grouped different foods in different categories according to each food’s characteristics. He grouped acid fruits together, sub-acid fruits, sweet fruits, starchy foods, and so on.

Dr. Shelton wanted to discover which categories of foods would mix with others. This was much simpler than trying to test every single food separately. He came up with a series of “rules” or guidelines that have had a considerable impact on many diet theories after him.

Dr. Albert Mosseri of France, who was a student of Shelton, pointed out that many of Shelton’s rules were based on pure theory and could be contested. He pointed out that it was rather pointless to try to define rules for combining foods which are unhealthy and shouldn’t be eaten in the first place.

Mosseri thought that by discussing the proper food combining of foods Shelton himself rejected, he induced in error a lot of his readers. Shelton never served in his institution meat, bread, or grains, but he included them in his food combining tables.

Mosseri decided to only discuss the food combining of foods that are healthy, and not include those that are not part of a hygienic diet. Many hygienists after him (Graham, Klein, etc.) have also created food combining charts that only included healthy and hygienic fare.

Another criticism made by Mosseri, when he reviewed Shelton’s “rules,” is that for a lot of his rules Shelton gives no explanation at all. In the end, Mosseri found that this large number of rules were too complicated and discouraging to most people.

Shelton also didn’t discuss much the concept of sequential eating, which is the order in which foods are consumed. He didn’t believe it was important. But many researchers and nutrition experts who came after Shelton found the most use in the concept of sequential eating — which is a perfect complement to food combining rules.

With sequential eating, you could eat without digestive problems a meal of foods that do not necessarily “combine”, as long you eat the foods in the proper order.

Food Combining Simplified to 3 Simple Rules

In my book “The Raw Secrets,” I have simplified food combining to a few simple rules. Let’s take a look at those rules again:

1- DO NOT COMBINE FAT WITH SUGAR

This is probably the most important rule to follow. The combination of fat (or protein) with sugar encourages fermentation. Some authors allow combining an acid fruit (such as an orange) with a fat (such as nuts or avocado). Although this combination isn’t the worst, it still isn’t optimal and often creates digestive problems.

Examples of this combination: dates with nuts, dried fruits with avocado, avocado with sweet fruits, a fruit salad with coconut, etc. etc.

2- DO NOT COMBINE ACID FOODS WITH STARCH

Acid with starch is a pretty bad combination. The acidity literally stops the digestion of starches, or makes it much more difficult (and sometimes painful).

Examples of this combination: mixing tomatoes with (cooked) potatoes, the classic tomato-sandwich, but also mixing bananas with oranges. Oranges contain much acidity and bananas still contain starch, even when they are ripe. Bananas combine better with fruits that contain less acidity (sweet apples, mangoes, etc.).

3- DO NOT COMBINE DIFFERENT TYPES OF FATTY FOODS WITHIN ONE MEAL

Fatty foods are quite difficult to digest. When many of them are present within a meal, digestion is considerably slower.

Examples of this combination: nuts with avocados, nuts with an oil, coconut with avocado, coconut with other types of nuts, etc.

That’s it! Those are the rules when eating a raw/hygienic diet. Of course, we could come up with more rules, but they would be for combinations that wouldn’t be appealing. For example, I doubt that fibrous vegetables (such as broccoli) would mix well with fruits (mangoes, etc.), but this combination is naturally unappealing, so it’s useless to discuss it.

RULES THAT ARE NOT NECESSARY TO FOLLOW

- Many people have asked, what about combining fruits and vegetables? Isn’t that bad food combining?

ANSWER: Combining leafy-greens (spinach, lettuce, celery, etc.) with any type of fruit is a good combination. It doesn’t break any of our 3 basic rules. Most people find this combination appealing and that it digests well.

- What about combining various types of fruit together?

ANSWER: Simpler is better. But if you want to mix different types of fresh fruits, they all combine well together, except for a few that are too concentrated: such as bananas, durian, etc.

- But shouldn’t we eat melons alone?

ANSWER: Melons can be combined with other types of fruit without problems. Even Shelton said so in his book, but no one noticed so they all imposed this rigid rule that “melons should only be eaten alone” which is absolutely not true.

- What about dried fruit?

ANSWER: As far as I’m concerned, dried fruit is not a food that I recommend, so there’s no point in discussing its food combining. It doesn’t combine well with most acid and sub-acid fruits.

A FEW OTHER RULES

Those combinations do not occur in a hygienic diet, but are good to know nonetheless:

1- DO NOT COMBINE STARCH WITH SUGAR

Cooked starch with sugar is one of the worst combinations in existence. No wonder so many people suffer from gas.

Some examples: bread with jam, cakes and pastries of all kinds, baked beans (with sugar), etc.

2- DO NOT COMBINE DIFFERENT TYPES OF STARCH TOGETHER

Mixing different types of starches together invites digestive confusion.

Some Examples: bread and potatoes, potatoes and pasta, etc.

3- DO NOT COMBINE PROTEIN WITH STARCHY FOODS

Some Examples: meat and potatoes, bread and meat, bread and cheese, etc.

I hope this clarifies the issue for now. There is still much to discuss, I know. I welcome your comments as always.
